First kabocha squash of the season. Blue hubbards and buttercups are close contenders to my heart. It also happens to be Luka’s favorite. I once gave her a piece of acorn squash and she spat it out.
The way I like to eat it; half inch thick slices, dry roasted, eaten as is, or paddled through thick soup, hummus, salsa or avocado. Kabocha is my desert island food.
